IMO, going light is great for the early game, when you can't afford heavy armor anyway, but you can do a bunch of stealthy stuff very viably, level up the stealthy stats, and get the stealthy perks, but then it becomes best to transition to heavier builds in the middle/late game. By the end you'll be quite stealthy, even in full plate.
It is best to ignore those perks as once you reach max they are straight up negative perks. If you do want to get one I would suggest brute. -1 to speech and charisma isn't that bad. Kingdom Come is one of the best RPG games that have released in the last years, but it is nothing but hardcore in the old school way. Just like in Fallout 1 you are thrown into a world you know nothing about and are bad at everything. You will suffer nothing but deaths and hours lost of progress.
The best way to level speech is to speak as often as possible, Practice makes perfect! But, note that only the dialogue options in bold will actually count towards that goal. The only quest that comes to mind is the hunt for heretics in Uzhitz, When the townsfolk see you talking to the inquisitor, your reputation in that town drops like a rock.

Ps my suggestion would be dont go too ham on leveling stats to max. once you get to 10- 12 go quest. Any more than this kills all fun in the game. 12 gives you all your core perks anyways. Game is still super easy statting at 12 overall from bernard
